Queen Victoria's favorite dessert still delights today

We adore strawberries! American flavors may differ from English ones, but the English love them.   

Queen Victoria's favorite cake and other English delicacies use these fruits.  

Fresh strawberry season changes English desserts' reputation. They love Eton Mess and Victoria Sponge, Queen Victoria's favorite cake, in the islands.  

– 6 ounces of all-purpose flour – 1 and 1/4 teaspoons of baking powder – 6 ounces of butter – 4 ounces of superfine sugar – 3 egg

Ingredients

– 1 cup of heavy cream (30%), chilled – strawberry jam for layering – fresh strawberries for decoration – powdered sugar for sprinkling

Additionally:

Butter and sugar should be white and fluffy.  

Preparation method:

Mix continually while adding eggs one by one. Stir in flour and baking powder.  

Put the batter in a parchment-lined 8-inch cake pan. Bake at 350ºF for 20-25 minutes. Let cool.  

Whip heavy cream until firm peaks form, adding powdered sugar if desired. Divide the sponge cake in two. Fill with jam and whipped cream.  

Use powdered sugar and fresh strawberries to decorate the cake.
