Pumpkin Chia Pudding

This pumpkin chia pudding mixes pumpkin, pumpkin pie spice, chia seeds, and almond butter to create a creamy and delightful fall breakfast or snack.

I'm enamored with chia pudding, so naturally I had to make a pumpkin flavor for fall! Make this pumpkin chia pudding! It's rich and creamy,

full of healthful fats and fiber. It's an excellent make-ahead breakfast or snack that completely fulfills my sweet desire.

The pumpkin flavor comes from canned pumpkin puree and pumpkin pie spice, while the maple syrup lends a mild sweetness. To add a hint of richness, I like to blend in almond butter!

This version is fantastic for breakfast or as a snack, but I also have a pumpkin chia mousse recipe that is delicious for dessert, so check it out as well!

Chia seeds are potent little seeds! When you mix them with liquid, they absorb it and develop a gel-like consistency.

Why are they in such good health? For starters, they are high in omega 3 fatty acids, which reduce inflammation and have been linked to a lower risk of chronic disease.

They are rich in antioxidants, plant-based protein, and fiber! Learn more about the health advantages of chia seeds.
