COLD SOBA NOODLES

Try this quick and simple cold soba noodle recipe. This recipe uses dried buckwheat noodles (soba noodles) plus a few additional Korean pantry items.

Cold soba noodles with perilla oil dressing (sometimes called perilla oil noodles) is a popular Korean noodle dish.

Deulgireum Makguksu (들기름 막국수) is a sort of Memil Guksu. Memil means buckwheat, while guksu means noodles.

Boiled and drained soba noodles are served with a sauce comprised of perilla oil, soy sauce, toasted sesame seeds, and other pantry staples.

Unlike many other Korean soba noodle meals, this sauce recipe is not hot. This dish falls under the Ganjang Bibim Guksu (soy sauce mixed noodle) category.

You may also buy pre-packaged perilla oil noodles, as seen in the image below. The packaging says, "Memil Makguksu (메밀 막국수)". However, I found these to be less tasty than homemade versions.
