Chia Seed Vegan Blueberry Pudding

In a bowl or jar, combine the plant-based milk, chia seeds, maple syrup or agave nectar, and vanilla extract. Stir well to combine. 

Let the mixture sit for about 5 minutes, then stir again to prevent clumping. Cover the bowl or jar and refrigerate for at least 2 hours or overnight. This allows the chia seeds to absorb the liquid and create a pudding-like consistency. 

Before serving, give the pudding a good stir. If it's too thick, you can add a bit more plant-based milk to reach your desired consistency. 

In a separate bowl, lightly mash the blueberries with a fork. You can leave some whole for texture. 

Layer the chia pudding and mashed blueberries in serving glasses or bowls. 

Top with additional blueberries, sliced almonds, shredded coconut, or any other toppings you prefer.
